Caymus Vineyards produces two Cabernets Sauvignons – a “Napa Valley” and the venerable “Special Selection”. Both Cabernet bottlings have aromas and flavors which can only be achieved through “hang time” – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine’s fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla.

Caymus Vineyards is based in Rutherford, in California's Napa Valley. Like most of the valley's famous producers, it specializes in top-end wines made from Cabernet Sauvignon, and its top wine, the Caymus Vineyard Special Selection, is notable for having been the only wine to have twice topped Wine Spectator's Top 100 list, with its 1984 and 1990 vintages.

The first vintage of Caymus was in 1972, although the Rutherford property, owned by the Wagner family, has been planted to grapes since the 1940s. These were sold to other producers in Napa until the 19-year-old Chuck Wagner agreed to help his parents establish a winery on their ranch. Today, Caymus Vineyards is still family owned and operated, with various wines made by Chuck's sons Joe and Charlie, and his daughter, Jenny.

Caymus Vineyard wines are unapologetically New World in style, tending toward the big, bold, fruit-driven end of the spectrum. Grapes are given a long hang-time in the vineyard, and crop thinning maximizes the amount of sunlight the grapes see during ripening.

"The 2016 Caymus Napa Valley Cabernet Sauvignon is sourced from eight separate Districts across the Valley. Inky in color, this begins with alluring aromatics of ripe dark fruits and wild blackberry cordial along with roasted figs and milk chocolate which continue to bring you back to the glass. On the palate this possesses a wonderful oppluent mouthfeel as well as a seamless quality that makes this nearly impossible to resist. Flavors of crème de cassis, mocha, tar, graphite and blackberry jam continue to build on the palate and expand through the long finish. A stunning wine, with outstanding weight and poise, this will cellar marvelously for the next fifteen plus years." (July 2018)
