Guillaume pulled back on the 100% new oak aging regime, and the 2012 Hommage a Nos Pairs was aged 17 months in 70% new French oak. A blend of 94% Syrah, 4% Grenache and 2% Viognier that was barrel fermented (5 weeks), it offers thrilling black raspberry, creamy licorice, sweet oak and graphite to go with a full-bodied, ultra-pure, layered and textured feel on the palate. It’s not cheap, but there’s only 110 cases to go around and it’s an awesome drink.
